Ever since I stumbled across this recipe in a Jamie Oliver cookbook, it’s become a go-to favourite for guests, Sunday morning breakfasts, parties, and basically any event that involves food. Amazingly simple and incredibly delicious, it’s a must try! Either eat it as a side dish/appetizer, or dip it in soft-boiled eggs for breakfast.

Ingredients
Asparagus (4-6 stalks per person, or more if people are hungry)
Prosciutto (half as many pieces of prosciutto as you have stalks of asparagus)
Olive oil
Directions
Preheat the oven to 400 F
Rinse the asparagus and cut off the woody ends.
Cut each slice of prosciutto lengthwise into two long strips.
Wrap each strip of prosciutto around one stalk of asparagus, starting at the bottom (wrap in a spiral pattern towards the top). Leave the tops of the asparagus exposed.
Arrange the wrapped asparagus stalks in a baking dish/roasting pan, and try to avoid overcrowding.
Drizzle lightly with olive oil (try not to go overkill here, too much olive oil will result in a soggy finished product. Still delicious, but not as pretty).
Roast in the oven for 10 minutes, if you have a good cooperative oven. If you have an older inconsistent oven like ours, roast until slightly browned and vaguely crisp, however long that may take.
